Filipino callos (tripe recipe from the Philippines) |

Ingredients1 kilogram of beef tripe 1 medium can of tomato sauce 1 small onion, chopped 1 cup chick peas 1 medium potato, cubed 3 cloves of garlic, chopped 1 red bell pepper, cut in strips 2 chorizos sausages, sliced olive oil salt pepper |
DirectionsPlace tripe in a pot with boiling water. Season with salt and pepper, then simmer over low heat until beef tripe is tender. When done, keep the stock and slice the tripe into cubes. In a pan with olive oil saute onion and garlic until soft. Add the beef tripe and the chorizo sausages. Stir and saute for a few minutes. Pour in the tomato sauce and some beef tripe stock and bring to boil. At this point add in the potatoes, the chickpeas, and the red bell pepper. Cover and simmer over medium heat. When the vegetables are tender, salt and pepper to taste, then serve really hot. |
